Homemade Granola Bars

My mom used to make these for us when I was in high school & I remember absolutely loving them! When Matt and I got married I made them a few times and each time they are gone before the end of the week. These homemade granola bars are delicious and stay soft when kept covered. The best part? They are so simple to make! You can just throw them into a baggy and they are perfect in lunches or for a quick grab and go breakfast.


1 cup peanut butter

1/2 cup brown sugar

1/2 cup corn syrup (can also use honey)

1/3 cup butter

2 tsp vanilla extract

3 1/3 cups rolled oats

1/2 cup semisweet chocolate chips


Preheat the oven to 350 degrees

Add peanut butter, butter, brown sugar, syrup, and vanilla to large bowl. Stir until smooth.

Mix in rolled oats and chocolate chips.

Press the mixture into a greased pan (13 X 9 works best)

Bake for 20-25 minutes & let cool before cutting into bars
