Keto Weekly Meal Prep
Matt and I try to follow a ketogenic/low carb diet as best we can! I have found that the best way to stay on track is to create a meal plan and prep as many meals for the week on Sunday as you can! I am sharing with you a great grab and go breakfast and the 5 lunches that I love to make every Sunday to get us through the week! The meals are all super easy, keto/low carb friendly, and take less than 2 hours to make! I am also sharing some of the staples that we keep in our fridge for a keto/ low carb friendly diet!

There are so many low carb friendly breakfast options! These egg muffins are my go to! I make them every week! Some weeks I will put ham in them, some weeks I like to do broccoli and cheddar cheese. The best part is you can literally add anything you want to yours! I used a regular muffin pan and placed my desired mix ins on the bottom, added one egg white to each spot, and topped each one with cheddar cheese, salt, and pepper! I have found that I like them best when they are baked at 350 for 25 minutes! This week's egg white muffins include spinach, red bell pepper, and cheddar cheese! You can eat them cold or pop them in the microwave for 30 seconds! They are a perfect grab and go breakfast!
Lunches can be a little bit more tricky! If you don't have time to meal prep or forget to grab your lunch before you head out the door, there are tons of great places to grab a keto friendly lunch! You can read all about the best keto friendly restaurants here!
Here are five of my staple keto friendly lunches that you can make in under two hours to help you stay on track during the week!
Fajita Chicken Salad Fajita Chicken w/ Bell Pepper
Both of these lunches use the same fajita chicken (Season with chili powder & taco or fajita seasoning mix). Pair it with lettuce or bell pepper and you have a great Mexican styled lunch!
Zesty Chicken Salad Italian Chicken & Garlic Green Beans
Both of these lunches use the same Italian chicken (season with zesty Italian dressing mix, and a little bit of paprika). Pair it with lettuce, garlic green beans, or any veggie of your choice! I sauté my green beans in a little bit of butter and minced garlic, then top with a pinch of parmesan cheese!
P3 pack & 2 hard boiled eggs
We always keep P3 packs in our fridge! They are great to grab and go, low carb, and delicious! I usually pair a pack with a couple hard boiled eggs!
