Low Carb Nachos
This one is for all of my keto and low carb friends! In case you haven't heard, the Ketogenic diet is a low carb, high fat/protein diet that gives you incredible results! These low carb "nachos" are to die for! They make me forget regular nachos have chips instead of bell peppers! They are everything nachos should be without the guilt-cheesy and crunchy! I have never been a huge fan of bell peppers until this last year and this is probably one of my favorite recipes with bell peppers! Not only is it delicious, but it is so easy! It only has 5 ingredients and takes less then an hour! Even this mama of two under two has time to make these! Here is what you need!
4 bell peppers (any color)
1lb ground beef
2 cups salsa
1 tbsp chili powder
2 cups shredded cheese
1. Preheat oven to 350
2. Slice bell peppers and place on a baking sheet
3. Brown ground beef, add chili powder
4. Mix ground beef, salsa, and 1 cup of cheese
5. Spoon mixture onto bell pepper slices, top with remaining cheese
6. Bake for 20-30 minutes
7. Serve immediately with salsa, sour cream, guacamole, or other favorite nacho toppings!
